Vanilla: History and Use in Perfumery
Amid the trees of the Mexican tropical rainforest, a lush climbing orchid known as Vanilla has thrived for thousands of years. This region's hot and humid climate promotes its growth, while pollination is carried out by Melipona bees (stingless bees), ensuring the plant's reproduction. Used by the Aztecs to flavor cocoa since ancient times, vanilla gained immense popularity in Europe during the reign of King Louis XIV, who was deeply enchanted by it. At that time, however, vanilla could only be imported from Mexico, as it couldn’t be cultivated elsewhere due to the lack of a suitable climate and pollinating bees. The turning point came in 1841 when a 12-year-old slave named Edmond Albius on the tropical island of Réunion (Indian Ocean) invented a practical technique for artificial pollination. This discovery enabled the cultivation of vanilla plants in other warm and humid regions of the world. Today, the largest producer of vanilla is no longer Mexico but Madagascar.
Where Does Vanilla Flavoring Come From?
How does the orchid with long green fruits transform into the black pod containing the spice we all recognize? Where does vanilla flavoring come from? The process is long and intricate, performed entirely by hand. Early in the morning, harvesters meticulously pick the fruits before they become overripe. These fruits, often mistakenly referred to as vanilla pods, are harvested while still yellow and odorless. They are blanched in boiling water; exposing them to sunlight during the day and then "sweated" by wrapping them in fabric strips during the evening for two weeks. Afterward, the fruits are dried for months. During this period, enzymes in the fruit produce various aromatic compounds, including vanillin, which is responsible for the sweet scent characteristic of most vanilla perfumes. The final step involves splitting open the fruits and extracting the spice inside, yielding a black, moist, granular paste widely used in cooking (also vanilla beans, the little seeds inside the "vanilla pods" are widely used for in cooking) and prized for its spicy yet slightly sweet aroma. In perfumery, the Absolute (commonly but mistakenly referred to as vanilla extract or vanilla essence) is used. This liquid is extracted from the spice through a CO2 extraction process, which is environmentally friendly and preserves the scent in its purest, most natural state—spicy, creamy, and subtly sweet. This labor-intensive process makes vanilla the second most valuable spice in the world, surpassed only by saffron. That said, modern perfumery often relies on the vanillin molecule, which is easily produced in laboratories. This dramatically reduces costs and production time but sacrifices the spicier, richer aspects of natural Absolute. Nowadays, vanillin and Absolute are often used together to create complex and nuanced scents. It’s worth noting that vanillin is sweeter than Absolute, but both provide the velvety, creamy aroma typical of vanilla.
